Here is a recipe for a yummy ‘Avocado and Green Pea Hummus’. Thanks Kate for sharing this one. Enjoy!
1 ripe avocado
2 tablespoons lime juice
½ clove garlic, minced
2 cans sweet green peas, drained (if using frozen peas, cook and cool before using)
1 teaspoon kosher salt or ½ teaspoon table salt
Directions:
1. Spoon out the flesh of the avocado and put it in a food processor.
2. Add the lime juice, garlic, drained peas and salt.
3. Process until you have ‘kermit’ colored puree.
4. Serve with sliced red peppers, snow peas, carrots or any other veggies
