Sicilian Cauliflower with Capers

Cauliflower. Not exactly party conversation, right? Plus, not many of you really like it all that much either. Listen up, this recipe is one of my favorites, plus it’s a crowd pleaser! Trust me, you’ll like it 🙂

Ingredients:

  • 1 teaspoon Real Salt, extra for seasoning
  • 1 medium head cauliflower, cut into florets (about 4 cups) *if you can find frozen cauliflower, this will save you time!
  • 1/2 cup extra virgin olive oil
  • 2 T capers, drained and rinsed
  • 1 lemon, juiced
  • Freshly ground black pepper
  • 1 lemon, cut into wedges

 Directions:

  1. Bring a large pot of water to boil, add 1 tsp salt and cauliflower.
  2. Cook for about 4 minutes, until al dente, do not overcook.
  3. Drain and transfer to paper towels, pat dry.
  4. Heat the oil and capers in a large skillet over medium heat.
  5. Add cauliflower and turn heat to medium high.
  6. Cook, stirring occasionally, for about 2 minutes, or until it begins to brown.
  7. Add lemon juice in small amounts and allow it to cook down.
  8. Serve hot with salt and pepper to taste and lemon wedges.
