Cauliflower. Not exactly party conversation, right? Plus, not many of you really like it all that much either. Listen up, this recipe is one of my favorites, plus it’s a crowd pleaser! Trust me, you’ll like it 🙂
Ingredients:
- 1 teaspoon Real Salt, extra for seasoning
- 1 medium head cauliflower, cut into florets (about 4 cups) *if you can find frozen cauliflower, this will save you time!
- 1/2 cup extra virgin olive oil
- 2 T capers, drained and rinsed
- 1 lemon, juiced
- Freshly ground black pepper
- 1 lemon, cut into wedges
Directions:
- Bring a large pot of water to boil, add 1 tsp salt and cauliflower.
- Cook for about 4 minutes, until al dente, do not overcook.
- Drain and transfer to paper towels, pat dry.
- Heat the oil and capers in a large skillet over medium heat.
- Add cauliflower and turn heat to medium high.
- Cook, stirring occasionally, for about 2 minutes, or until it begins to brown.
- Add lemon juice in small amounts and allow it to cook down.
- Serve hot with salt and pepper to taste and lemon wedges.
