Does this sound familiar… Long day at work? Don’t feel like cooking? Another night of take-out. Doesn’t help your waistline now does it?
It seems so simple and obvious, but not having healthy foods available at the ready is one of the biggest obstacles to reaching your weight loss goals.
I absolutely love this time of year, because making a big crock pot soup or stew will provide me with tons of leftovers that I can freeze for later use.
Here’s how YOU can do it:
- Find and separate your recipes that can be anytime meals or post workout meals. Anytime meals are ones’s without a starch (example: Chicken Coconut Green Curry Stew). Post workout meals include healthy starches like yams, potatoes, rice, etc. (example: Turkey, vegetable and wild rice soup).
- Consider doubling the recipe or use a crock pot so you have plenty of leftovers.
- After cooling the soup, portion out the leftovers into containers and add a label with the date and the name. Freeze what you don’t need right away.
I use the America’s Test Kitchen Slow Cooker books. They know the science of making food tasty. I especially like the second volume of their slow cooker books, as its theme is the “Easy Prep Edition”. Here are a few of my favorites: Lemony Chicken with Artichokes and Capers, Braised Steaks with Horseradish Smashed Potatoes, Beef and Three Bean Chili, Thai Style Shrimp Curry, and Cajun Shrimp and Corn Chowder.
